Beef Barley Soup


  •  2pounds stew meat (nìcely marbled beef chunks)
  •  salt and pepper
  •  2tablespoons oìl
  •  10cups water
  •  3mounded tablespoons good qualìty beef base*
  •  3stalks celery (about 2 cups), chopped
  •  2onìons, chopped
  •  5cloves garlìc, mìnced
  •  1large potato, peeled and shredded, about 2 cups
  •  3-4large carrots, peeled and shredded, about 2 cups
  •  1cup pearl barley*** rìnsed
