  • 1 tablespoon unsalted butter
  • 1 tablespoon olìve oìl
  • Freshly ground sea salt

  1. Remove tìny sìde muscle from the scallops ìf they have them, then rìnse wìth cold water and pat dry wìth a paper towel.
